This Week's Menu Plan
Well, I do think they taste great, but since the little one didn't care for them, they don't make for a very good fruit snack substitute. I'll have to ditch that idea and try to think of something new.
We did try grilling up sweet potatoes this week. WHAT AN AMAZING DISH! I didn't take pictures, but trust me, slice those things up, put them in tin foil with some butter and salt and you will have a GREAT side dish for steak or any other grilling fare. Here's our menu for this week: Monday: D- meatloaf, baked sweet potatoes (both new recipes) Tuesday: B- Granola (new recipe) D- Leftovers Wednesday: B- Scrambled Eggs D- Skillet Enchiladas (new recipe), salad Thursday: B- Perpetual Pancakes D- Tuna Salad Sandwiches on Whole Wheat Rolls, Carrots, Apple Slices Friday: B- Granola D- Baseball Game...dinner at the stadium Saturday: B- Potato Pancakes, Sausages D- Birthday Party for some friends' kids Sunday: B- Butter Braid D- Homemade Chicken Nuggets and French Fries (new recipes) What do you have planned for this week? Strawberry Rhubarb Muffins
Well, these muffins were really good! I did try to cut the brown sugar by a bit, but I'm thinking I could even cut some more and it would still taste great. Both my husband and son liked them too (My son mostly liked the top of the muffin, which had the topping. He wouldn't touch the first version though, so I take this as dramatic improvement!). I made this as part of my efforts to eliminate boxed cereals from our diet. Since I can make them ahead of time, they make breakfasts so easy!
Strawberry Rhubarb Muffins
modified from AllRecipes
Ingredients: Muffins
1/2 cup vanilla yogurt (I used plain homemade yogurt)
2 T butter, melted
2 T oil (I used coconut oil)
1 egg
1 1/3 cup flour (you can use any combination of all-purpose, whole wheat or white wheat...I used half white and half whole wheat)
3/4 cup brown sugar
1/2 t baking soda
1/4 t salt
1 cup diced rhubarb
1 cup diced strawberries
Ingredients: Topping
1/4 cup brown sugar
1/2 t ground cinnamon
1/4 t ground nutmeg
1/4 cup crushed walnuts
2 t melted butter
Directions:
1. Preheat oven to 350 degrees. Grease a 12 muffin tin, or line with paper liners.
2. In a medium bowl, stir together the yogurt, 2 tablespoons of melted butter, oil and egg. In a large bowl, stir together the flour, 3/4 cup brown sugar, baking soda and salt. Pour the wet ingredients into the dry, and mix until just blended. Fold in the rhubarb and strawberries. Spoon into the muffin tin, filling at least 2/3 full.
3. In a small bowl, stir together 1/4 cup brown sugar, cinnamon, nutmeg, walnuts, and 2 teaspoons of melted butter. Spoon over the tops of the muffins and press down lightly.
4. Bake for 25 minutes or until the tops spring back when lightly pressed. Cool in the pan about 15 minutes before serving.

On It's Way!
White Whole Wheat Flour
I searched my local grocery stores for it without luck.
Then today I decided it's worth ordering online and took the plunge. I'm sure it's going to make my bread and buns (for hamburgers, of course!) softer and more appealing to my white bread loving husband. I can't wait!
Do you already use this in your baking? Have you had good results? Do you have any other tips for making bread healthier AND appealing to those who have grown up with white bread?

Moving Matters: How Much Physical Activity Do Families Need?
I really feel though that our family's physical condition is crucial to maintaining health.
Before I discuss how our family is making an active lifestyle a priority, I want to highlight how much activity the experts recommend.
For my son, who's almost 18 months old, KidsHealth.org recommends 1 1/2 hours of minimum daily activity. Of that, 30 minutes should be planned while 60 minutes can be free play. The link will also take you to the recommended activity amounts for older children.
For my husband and me, the American College of Sports Medicine and American Heart Association tell us that we should be getting:
- moderately intense cardio 30 minutes per day, five days a week, OR
- vigorously intense cardio 20 minutes per day, three days per week, AND
- 8-10 strength exercises, 8-10 repetitions of each, two times per week
How about you? Did you know about these recommendations? Does your family already follow them or do you (like us) have room for improvement?

Homemade Ice Cream: First Time!
Yum, yum! I love the vanilla flavor and the richness of the ice cream. My husband says he loves the taste too. My son loved watching the whole process, especially when I layered the ice and rock salt in the wooden bucket. He kept saying, "peam," which is his word right now for ice cream. And boy did he love it! I can definitely envision this as a fun family activity for years to come.
I froze the leftovers in plastic yogurt containers, which didn't work out the best. Tonight when I went to scoop up a bowl, I tried to use a knife to loosen some of the ice cream from the edge of the container. Well, I poked a hole right in the side of the container, so I'm going to have to think something more sturdy to put these delicious creations in. Maybe just a regular ice cream bucket? What do you use?
I'd love to hear from some of you experts out there. What are your favorite recipes? Now that I've made my first batch, I'd love to experiment with something new!
(I apologize for the lack of pictures in this and upcoming posts. My camera is currently out of commision and I'm trying to convince DH that we NEED a DSLR!)

Getting Back Into The Swing of Things
As for healthy living...we are still doing our best. It is definitely a challenge trying to fit in workouts and they have taken a back burner as I adjust to being a full-time stay at home mom. I do take my son for walks to the park every chance we get, but I have yet to set up my workout area in this new house. This is something I'm looking forward to doing in the next month or so.
I am still trying to make great meals for our family and gradually improve upon the quality of recipes I cook. One challenge we have had recently is that we're travelling to see family quite a bit and that lends itself to eating out more often. I'd like to have a better meal plan in place to try and avoid some of those restaurant stops when possible. My kitchen is amazing though! Our last house had such a tiny kitchen and eating space, and I'm just ecstatic to have a more spacious place to prepare our family's meals. It has been so much fun to cook there and I really feel like I'm starting to get into a great groove with cooking.
So, that is the update from our household. Where are you with fitness and nutrition in your life right now? Have you had any big changes in your life that have caused you to change your routines?
