Strawberry Rhubarb Muffins

As promised, I'm sharing my strawberry rhubarb muffin recipe with you this week. This is actually the strawberry rhubarb recipe I tried, as the first one was OK but just not amazing.

Well, these muffins were really good! I did try to cut the brown sugar by a bit, but I'm thinking I could even cut some more and it would still taste great. Both my husband and son liked them too (My son mostly liked the top of the muffin, which had the topping. He wouldn't touch the first version though, so I take this as dramatic improvement!). I made this as part of my efforts to eliminate boxed cereals from our diet. Since I can make them ahead of time, they make breakfasts so easy!

Strawberry Rhubarb Muffins

Ingredients: Muffins

1/2 cup vanilla yogurt (I used plain homemade yogurt)

2 T butter, melted

2 T oil (I used coconut oil)

1 egg

1 1/3 cup flour (you can use any combination of all-purpose, whole wheat or white wheat...I used half white and half whole wheat)

3/4 cup brown sugar

1/2 t baking soda

1/4 t salt

1 cup diced rhubarb

1 cup diced strawberries

Ingredients: Topping

1/4 cup brown sugar

1/2 t ground cinnamon

1/4 t ground nutmeg

1/4 cup crushed walnuts

2 t melted butter

Directions:

1. Preheat oven to 350 degrees. Grease a 12 muffin tin, or line with paper liners.

2. In a medium bowl, stir together the yogurt, 2 tablespoons of melted butter, oil and egg. In a large bowl, stir together the flour, 3/4 cup brown sugar, baking soda and salt. Pour the wet ingredients into the dry, and mix until just blended. Fold in the rhubarb and strawberries. Spoon into the muffin tin, filling at least 2/3 full.

3. In a small bowl, stir together 1/4 cup brown sugar, cinnamon, nutmeg, walnuts, and 2 teaspoons of melted butter. Spoon over the tops of the muffins and press down lightly.

4. Bake for 25 minutes or until the tops spring back when lightly pressed. Cool in the pan about 15 minutes before serving.
